Breath of Contract Onions

 

3 Medium Onions, unpeeled

1 cup Chicken Broth

3 Tbsp. Lawyer's Breath Hot Sauce?

1 1/2 Tbsp. Olive Oil

1/2 lb Fresh Goat Cheese

 

Preheat oven to 300? F. Rub unpeeled onions all over with olive oil and place them into a shallow dish 1 inch apart. Over them, pour chicken broth, which should cover them no more than halfway. Bake uncovered for 1 to 11/2 hours.

To serve, cut the onions in quarters, but only to within 1 inch of the bottom. Then. open the centers pulling apart the onion layers and divide the cheese and Lawyer's Breath Hot Sauce? evenly.

Frolic Au Gratin

 

4 Large Tomatoes

1 Onion

1/2 tsp. Lawyer's Breath Hot Sauce?

2 oz. Butter

1/2 Pint Milk

1 Tbsp. Fresh Bread Crumbs

1 1/2 lb Fresh Peas

2 Tbsp. oil

3 Tbsp. Plain Flour

4 ozs. Cheese

Salt and Pepper to Taste

 

Preheat oven to 400? F. Cut the tomatoes in half and scoop out the flesh. Discard the seeds and chop the flesh. Shell the peas. Peel and finely chop the onion.

Heat the oil in a frying pan and fry the onion until transparent. Add the peas, cover and cook for five minutes. Stir in the chopped tomato flesh, season and continue cooking, covered, for 10 minutes.

Meanwhile, melt the butter in a saucepan. Stir in the flour and cook for 1 minute. Gradually stir in the milk and bring to a boil, stirring until thickened.

Grate the cheese. Mix three-quarters into the sauce pan with the pea mixture. Fill the tomato halves and arrange in an oven-proof dish. Mix the remaining cheese with bread crumbs and Lawyer's Breath Hot Sauce?, then sprinkle over the tomatoes. Bake for 20 minutes.

Restraining Order Relish

 

3/4 Cup White Vinegar

2 tsp. Salt

1 Tbsp. Mustard Seed

6 Cups Shredded Green Cabbage

1 4oz. Can pimento, sliced.

3/4 Cup Water

1/3 Cup Sugar

4 Tbsp. Under the Influence Tomatillo Sauce?

1 Cup Sliced or Diced Green Pepper

1 Red Onion, Thinly Sliced

 

Place vinegar, water, salt, sugar and mustard seed in a medium sauce pan. Bring to a boil and simmer 5 minutes. Cool. Add cabbage, green pepper, pimiento, red onion and Under the Influence Tomatillo Sauce?. Marinade in large bowl. Toss well. Cover and refrigerate for 2 hours.

 

Serves: 6-8

Jailer Salad

 

1 Can Kidney Beans

2 Tbsp. Chopped Pickled Okra

2 Tbsp. Under the Influence Tomatillo Sauce?

3 Tbsp. Sauerkraut Juice

2 Hard Boiled Eggs

2 Tbsp. Chopped Onions

4 Tbsp. Salad Dressing

Salt And Ground Pepper to taste

 

Drain can of kidney beans well. Add chopped eggs, pickles, onion, salad dressing and sauerkraut juice. Salt and pepper to taste. Mix all and let stand in refrigerator for at least two hours before serving.

 

Serves: 6

 

Handcuff Salad

 

5 Medium Tomatoes

3/4 Cup Olive Oil

1/2 tsp. Salt

1/4 Cup Crushed Red Peppers

4 Medium Onions, chopped (3 cups)

1/4 Cup Red Win Vinegar

1/2 tsp. Dried Basil Leaves

3 Tbsp. Under the Influence Tomatillo Sauce?

 

In large bowl toss. Refrigerate at least 3 hours before serving. Do not refrigerate any longer than 48 hours.

 

Serves: 12

 

Hung Jury Salad

 

1 1/2 lb. Cooked Pork

3 Pickled Chipotles, cut into slices and vinegar reserved

1/4 lb. Fresh Cheese, Queso Fresco or Feta

2 Tbsp. Sour Cream

4 ozs. Vegetable Oil

1 Head Romaine Lettuce

3 Avocados sliced

1 Red Onion sliced

2 Tbsp. Contempt of Court Pepper Sauce?

 

Shred pork and fry in lard until golden. Remove and drain. Season with little vinegar from the chipotles. Wash and dry the lettuce. Arrange in an open salad bowl or on a platter. Place the meat and slice chipotles on the lettuce. Sprinkle with crumbled chees and add the sliced avocados and onion. Drizzle with Contempt of Court Pepper Sauce?. Serve topped with sour cream.

Penal Pepper and Tortuous Tomatillo Salsa

 

1 lb. Fresh Tomatillos

3 Fresh Jalapeno Peppers

1 Clove Garlic

4 Tbsp. Lawyer's Breath Hot Sauce?

1 cup Fresh Cilantro Leaves

1/2 tsp. Sugar

2 Fresh Green Anaheim Peppers

5 Green Onions with several inches of tender green tops

5 Tbsp. Fresh Lime Juice (2 Limes)

1 tsp. Salt

 

Remove husks and stems from the tomatillos and wash well. Cut tomatillos in halves, place in a saucepan with just enough boiling water to barely cover. Bring back to a rapid boil and blanch for 2 minutes until tomatillos are just tender. Drain immediately and refresh with cool water and drain well. Process quickly in blender or food processor with all remaining ingredients until coarsely blended. Serve with enchiladas, grilled meats, grilled fish or tortilla chips.

 

Alimony In Green Sauce

 

2 Cloves Garlic

1 tsp. Vegetable Oil

3 to 10 Serrano Chilies, roasted, de-veined, seeded and cut in strips

1/2 tsp. Cumin

1 Onion, sliced

1 lb. White Button Mushrooms

8 Fresh Tomatillos

4 Tbsp. Under the Influence Tomatillo Sauce?

Salt to taste

 

Mince one clove garlic. Cook the onion and minced garlic in oil until onion is transparent. Add the mushroom and chilies stirring well. Continue to cook until chilies are just slightly browned and mushrooms are golden.

Halve the tomatillos, then liquefy them in a blender with the remaining garlic clove, Under the Influence Tomatillo Sauce?, cumin and salt to taste. Add this to the mushrooms and cook over low heat for 20 minutes, allowing the mushrooms to absorb the flavors and seasonings.

 

Salacious Salsa

 

1 Poblano Chile

2 Tbsp. Cranberry Juice

2 Cloves Garlic, chopped

5 Tbsp. Contempt of Court Pepper Sauce?

1 Tbsp. Fresh Cilantro, chopped

2 Cups Black Beans, cooked

1/4 Cup Raw Red Bell Pepper, diced

1 Yellow Onion, sliced thick (3/4 inch)

1 Tbsp. Chipotle Chile, diced

1/4 tsp. cumin

Salt to taste

 

Char poblano chili until blistered.. Cool, peel, seed, de-vein and dice chili. In a frying pan, roast garlic and onion until brown, then chop. Place in a bowl with all additional ingredients and salt to taste.

 

Fifteen to Twenty Guacamole

 

2 Jalapeno Chilies with Seeds

1 Large Ripe Avocado

1 Clove Garlic

1/4 Cup Fresh Cilantro, coarsely chopped

1/4 Cup Red Onion, diced

1/4 tsp. Salt

1 Cup Water

2 Tbsp. Avocado or Olive Oil

4 Tbsp. Under the Influence Tomatillo Sauce?

1 Tbsp. Lawyer's Breath Hot Sauce?

 

Place all ingredients in a blender and process on high until smooth.

 

Makes: 2 1/2 Cups

Inmate Soup

 

3 Large Potatoes

6 Carrots

3 Yellow Squash

1 Large Onion

1 Habanero Pepper

1/2 lb. Green Beans

2 Tbsp. Under the Influence Tomatillo Sauce?

Salt to taste

 

Wash and peel potatoes, onion and carrots then chop coarsely. Wash squash and chop coarsely. Remove stem and seeds from habanero pepper and chop. Place all vegetables in large saucepan or soup pot. Cover with water or a mixture of vegetable stock and water. Bring vegetables to a boil, reduce heat and simmer covered for one hour over low heat, until vegetables are very tender. Cool.

In 2-3 cup batches, puree in blender or food processor until smooth. Add salt to taste. Reheat and serve with Under the Influence Tomatillo Sauce?.

 

Lawyer's Breath Beans

 

2 Cups Small Red Beans, sorted and rinsed

1 Ham Hock

3 Yellow Squash

1 Onion, quartered and the quarters sliced.

1 tsp. Cumin Seeds, crushed

1 1/2 qt. Cold Water

3 Cloves Garlic, coarsely chopped

1 tsp. Chili powder, made from mixture of Ancho and Arbol.

2 tsp. salt

4 Tbsp. Lawyer's Breath Hot Sauce?

 

Cook beans in the water for 3 to 4 hours at a low simmer. Add more water if necessary while cooking. When you can easily smash a bean between your thumb and forefinger add the ham hock, garlic, onion, chili powder, cumin and Lawyer's Breath Hot Sauce. Cook for another hour or so, until the meat on the ham hock begins to separate from the joint. At this point taste the beans, and season with salt. Make other seasoning adjustments. Remember that as the beans stand their flavor improves.

 

Serves: 10 (small servings)

Parole Board Sirloin Steak

 

3 Tbsp. Butter

1 tsp. Garlic Powder (crushed fresh garlic is preferred)

3 Tbsp. Worcestershire Sauce

1/2 Tbsp. Steak Sauce

4 Tbsp. Contempt of Court Pepper Sauce?

 

Melt butter in saucepan, over low heat and add garlic. Add other ingredients and stir until mixed. Bring to boiling point and remove from heat. Place 2 1/2 lb. sirloin steaks on broiler pan. Brush steak with sauce mixture. Broil 3 inches from heat for 5 minutes. Turn steak and brush with steak sauce mixture. Broil for 5 minutes longer.

 

Serves: 4

 

Snake In The Grass (or Lawyer In Waiting)

 

1 Rattlesnake (or equivalent)

1 tsp. Garlic Powder (crushed fresh garlic is preferred)

1 Cup Flour

1/4 Cup Cracked Meal

2 Tbsp. Lawyer's Breath Hot Sauce?

Salt and Pepper to Taste

 

Kill rattlesnake and remove entrails. (No road-kill allowed) Cut into edible portions. Make a batter consisting of the flour, cracked meal, garlic powder, salt, pepper and Lawyer's Breath Hot Sauce. Roll your snake portions in the batter. Fry in deep fat, heated to a temperature that will ignite a floating match. Fry until snake meat is golden brown.
